History:
Cotechino di Modena Igp was born together with his "brother" Zampone in 1511: during a siege of the town of Mirandola, near Modena, by Pope Julius II della Rovere, a cook had the idea of slaughtering the pigs, so as not to give them to the enemy, and keep the meat inside the rind, so as not to rot it and then be able to use it at a later time.
Born almost by chance, the product spread more and more in the neighboring territories, becoming a real institution of Modenese and Italian cuisine. In 2001, to protect and promote Cotechino IGP and Zampone IGP, the Zampone and Cotechino di Modena IGP Consortium was born.
Product description:
It is a very ancient food which, contrary to popular belief, is in line with modern nutritional science as regards its fat content; it has a compact and uniform slice, dark pink tending to red. It is very easy to slice, given its soft and compact consistency; for precooked Cotechino Modena IGP, a cooking time of up to 25-30 minutes is required.
It does not contain gluten, milk derivatives and added polyphosphates and will be delivered vacuum-packed in a box with a label.
Tips & Pairings:
Its most famous combination is certainly with lentils or mashed potatoes, but it is excellent if accompanied by spinach with butter and flakes of Parmigiano Reggiano Dop.
Considering the perception of greasiness and fatness that this sausage leaves, we advise you to combine a wine capable of degreasing and "cleaning" the palate, therefore with a good acidity and medium body.
Therefore, a young and fragrant sparkling red wine that is not too aromatic can certainly accompany Cotechino di Modena Igp;
Lambrusco, in particular Lambrusco di Sorbara, is the most popular choice in these cases, but also a good Gutturnio can certainly be for you.
