History:
Sant'Agata Feltria, Montefeltro, the Savio Valley and the Bidente Valley are hilly and mountainous areas which, due to their pedo-climatic characteristics, fully represent the natural habitat for the growth and selection of quality truffles; In addition to the White Precious truffle, the most famous and renowned, you can also find the Black Summer, the Black hooked and the Bianchetto. Sant'Agata Feltria has always been an area very rich in truffles, since the post-war period these products grew spontaneously in the various areas and it was frequent during sowing and autumn plowing to find very large truffles close to the land. Over time, the value attributed to this excellence increases more and more, creating different professional figures around the collection and sale of the product. A further boost to the knowledge and fame of the Sant'Agata Feltria truffle was given by the creation of the relative festival, a real point of reference for lovers, experts and the curious of the sector; in a few years it became a fair of national importance, with tens of thousands of people attracted by the event.
Product description:
This pasta shape, typical of Central Italy and similar to spaghetti alla chitarra but with a rectangular section, is created with water and durum wheat flour: it is therefore born as a simple dish, but in this version the dough is embellished by the presence of Black summer truffle and porcini mushrooms. The strangozzi with summer truffle are dark in color, consistent and quite porous, a characteristic that makes them perfect for holding sauces and condiments; furthermore, the slow drying at low temperature allows the components to remain unchanged and to preserve an intense and characteristic flavor.
Tips & Pairings:
Dressed with a drop of extra virgin olive oil and a grated Parmigiano Reggiano DOP 24 months, these strangozzi with summer truffle will surprise even the most demanding and refined palates. For an even more intense and complete flavor, we recommend adding slices or flakes of Summer Truffle on top of the dish
