History & Curiosity
Honey since the times of the ancient Romans has been a fundamental ingredient in the Mediterranean diet and the basic practices of beekeeping date back to the end of the 19th century and the beginning of the 20th century, which were then perfected and modernized over time. Today, in order to be able to market the product from bees, a series of procedures are put in place to extract it from the combs: after having operculated the combs, ie removing the "wax plug" that closes the cells containing the honey, the honey extraction is carried out with the honey extractor which, by means of centrifugal force, extracts the product and prepares it for filtration, a passage in which pure honey is separated from other residues of external material.
The last step is decantation, which consists in bringing out the last unfiltered impurities during filtration;
later, the honey will be ready for potting and sale!
The Chestnut and Millefiori Mountain honeys offered have the registered trademark of the Modena Chamber of Commerce to distinguish them from honeys from other areas and include the best producers in the province of Rimini, Parma, Reggio Emilia, Modena, Forlì-Cesena, Bologna and Piacenza.
The uses in the kitchen are truly infinite: it can act as a sweetener in milk for breakfast, as an accompaniment to cheeses, and meats, as a condiment in salads or cold dishes, obviously without forgetting its use in the preparation of desserts and cakes.
