Il riso è una delle piante alimentari più antiche ed è originario del sud-est asiatico.
L’introduzione in Italia sembra sia avvenuta dapprima nel sud ad opera degli Arabi e degli Spagnoli.
La coltivazione del riso nel Delta del Po risale al 1400, anche se la produzione estensiva ed organizzata si sviluppò solo nel XVI secolo, per opera della famiglia degli Estensi, che riuscirono a sfruttare i terreni acquitrinosi che altrimenti sarebbero rimasti abbandonati.

Arborio is harvested in crops with low environmental impact, and is the historic Italian rice.
Compared to the other varieties, it is the one with the lowest cooking resistance; you must therefore be careful not to overcook it.
The main characteristic common to these rices, which differentiates them from many others on the market, is that they are pure .
It means that all the grains have the same diameter and belong to the pure Arborio variety, without being combined with other similar grains of other varieties but enclosed under the same name; they are all therefore highly digestible rice.
Tips & Pairings:
The Arborio del Delta del Po Igp has a large grain.
Due to its characteristics it is particularly suitable for the preparation of risottos and for dry recipes in general.
The advice is to leave it slightly al dente, given its poor cooking resistance
