  • History:

    The production area of the Patata di Bologna PDO includes some municipalities in the province of Bologna. The first written documents concerning the presence of Potato in the Bolognese area date back to the mid-17th century when in the botanical garden of the University it was treated and described as a medicinal plant by botanists; between the mid 1600s and early 1700s the potato began to be cultivated also in the countryside of the area, but the turning point came in the second half of the 1700s when Bignami, agronomist and landowner, began to promote the product as a precious and delicious food. Over time, the potato grown in this area becomes an important nutritional and economic source, up to the selection of the Primura variety: it is the ideal type of potato for the climatic conditions and the type of soil in the Bolognese area and will become a true and its symbol of the territory. To enhance and protect this excellence, the Consorzio Patata Tipica di Bologna was born in 1992 which, through a long process, managed to obtain the European DOP certification in 2010.

  • Product description:

    The quality and typicality of the Bologna PDO potato is due to very favorable climatic - territorial conditions and thanks to the experience of the Bolognese farmers; the variety selected as PDO is Primura, which has an elongated and regular shape, with small holes on the skin. The color of the pulp is straw yellow and is distinguished by its refined aroma and its delicate taste, characteristic but not too dry or floury: it is always good!

    It will be delivered in 2 kg nets with label and brand.

  • Tips & Pairing:

    The Primura variety stands out for its flexibility and versatility in the kitchen; it is excellent baked in the oven to accompany cod, or as a purée in combination with the famous Cotechini and Zamponi di Modena IGP or the Salama da Sugo IGP from Ferrara. It is also very popular when boiled or fried, exceptional when used to make potato gnocchi. A real regional excellence!
